Potato salad is a classic salad. There are many different versions of this salad. This is my favourite version. Perfect as a BBQ side dish! Store the leftovers (if there are any) in the fridge, so you can bring it to work or school the next day!

  • 1kg small potatoes
  • 2 tablespoons of balsamic vinegar
  • 5 hard-boiled eggs
  • 200 ml of mayonnaise
  • 2 tablespoons of mustard
  • 1 red onion, chopped
  • 150 gram of cottage cheese
  • 150 gram ham or bacon bits
  • 1 tablespoon of chopped spring onion
  • 6 gherkins, chopped
  • Freshly ground pepper to taste
  • Salt to taste
  • Parsley (for garnish)
  1. Peel the potatoes. Boil them in water with a punch of salt until they are cooked.
  2. Drain the potatoes, cut them into cubes. Put the potatoes in a bowl. Add the vinegar and stir to combine. Set aside.
  3. Cut the eggs into halves. Put the egg yolks in a separate bowl. Add the mayonnaise, mustard, red onion, cottage cheese, chopped gherkins, spring onion and ham/bacon. Mix together.
  4. Cut the egg whites in small bits.
  5. Mix all of the ingredients together.
  6. Season with salt and freshly ground pepper.
  7. Garnish with parsley.
