Kanafeh is a leventine pastry made with kataifi shredded filo dough, ricotta and mozzarella cheese, rose water, and syrup. It is not that difficult to make and if you have a sweet tooth, this is your kind of dessert!

  • 450g shredded filo dough (kataifi dough, available on Amazon)
  • 425g ricotta cheese
  • 120g mozzarella cheese, grated
  • 5 tablespoons of caster sugar
  • 340g unsalted butter

  • Syrup:
  • 200g caster sugar
  • 125ml water
  • 1 teaspoon of lemon juice
  • ⅛ teaspoon of rose water
  1. Preheat your oven to 200C.
  2. Finely chop the frozen, shredded filo dough using a food processor. The strands of the dough should resemble a grain of rice or couscous. Put the dough in a large bowl.
  3. Get a different bowl. Put in the ricotta, mozzarella and 5 tablespoons of sugar and mix well.
  4. Put the butter in a microwavable measuring cup or bowl. Heat it up in the microwave until it is melted. Let it sit for several minutes until a thick white foam has formed on top. Use a spoon to skim of the foam.
  5. Pour the melted butter onto the filo dough. Try not to pour in the white milk solids that have formed at the bottom. With your hands, mix the butter and dough together. Make sure that the butter is absorbed by the dough.
  6. Spread the filo dough into a baking tin (20x30) and press the dough evenly and firmly into the bottom and edges.
  7. Spread the cheese mixture onto the filo dough, but avoid the edges of the tin.
  8. Put the tin in the oven and bake for 30-35 minutes or until the cheese is slightly golden and the edges of the filo dough are brown and bubbly.
  9. To prepare the syrup: Get a small saucepan. Add the water and 100g of sugar. Bring it to the boil over high heat. Reduce to medium heat and add the lemon juice. Let the mixture simmer and stir constantly and until the sugar has dissolved (5-7min). Make sure that the mixture does not caramelise. Remove the pan from the heat and add the rose water. Set the mixture aside.
  10. Take the kanafeh out of the oven. Invert the baking dish onto a plate or baking tray (careful!). The filo dough is now on top.
  11. Pour the syrup over the kanafeh. Cut into pieces and serve while hot.
