If you like sweet and sour, you will love this easy-to-follow recipe for Sweet and Sour Prawns. This Chinese classic only takes 40 minutes to make and tastes heavenly!

  • 3 tbsp groundnut oil
  • 8 large king prawns, de-veined, shelled, heads removed
  • 1 tbsp grated fresh root ginger
  • 1 red chilli, de-seeded and finely chopped
  • ½ onion, chopped
  • 50g/2oz canned pineapple, drained and chopped
  • 200ml/7fl oz pineapple juice
  • 1 small handful red and yellow pepper, chopped
  • 1 small handful of beansprouts
  • salt and freshly ground black pepper
  • ½ lime, juice only
  • honey, to taste
  • 1 spring onion, finely sliced
  1. Get a wok and heat it on high heat until it smokes. When it is smoking, add two tablespoons of groundnut oil. Add the prawns. Stir-fry until the prawns are pink and just cooked through (3-4 minutes). Remove the cooked prawns from the wok and set aside.
  2. Heat the rest of the groundnut oil in the wok. Add the chilli and ginger. Stir-fry for 30 seconds. Add the onions, stir-fry until the onions are softened (2-3 minutes).
  3. Get a food processor or blender and blend the pineapple with the pineapple juice so you get a smooth purée. Let the purée simmer in the wok for 1-2 minutes.
  4. Add the beansprouts and the chopped peppers. Stir well.
  5. Season (to taste) with honey, lime juice, black pepper and salt.
  6. Add the prawns and stir through the sauce. Garnish the Sweet and Sour Prawns with the spring onions.
Serve with some steamed jasmine rice!
