Spring rolls are a popular Chinese appetiser. They make for great party food, or a tasty snack. With this recipe for Chicken Spring Rolls you can make healthy spring rolls that are also incredibly yummy!

  • 300g pack cooked rice noodles
  • 400g/14oz mixed vegetables thinly sliced, like red peppers, beansprouts, carrots, shredded Chinese leaf cabbage, spring onions etc…
  • 140g cooked prawns
  • 100g cooked chicken or duck, shredded
  • 2 garlic cloves, finely chopped
  • small piece of ginger, finely chopped
  • splash light soy sauce
  • Chinese five-spice powder, for sprinkling
  • 8-10 sheets of filo pastry
  • 1 egg, beaten
  • sesame seeds
  • Dipping sauce:
  • 100g reduced salt and sugar ketchup
  • 1 tbsp white wine vinegar
  • small piece of ginger, grated
  • pinch of caster sugar
  1. Preheat oven to 200C (Gas 8).
  2. Get a bowl. Put the veggies, the noodles, prawns and chicken in the bowl. Add the garlic, ginger, some five-spice and some soy sauce and mix everything together.
  3. Get a sheet of pastry. Spoon the filling down one side of the pastry sheet. Brush some beaten egg around the edges. Fold both sides over the filling and roll it up neatly. Repeat for all pastry sheets.
  4. Put the assembled rolls on a baking tray, seam side down. Brush them with the beaten egg, and sprinkle on some sesame seeds. Bake the rolls for 20-25 minutes, or until they are golden brown.
  5. While the rolls are baking in the oven, you can make the dipping sauce. Get a small bowl, and mix together all the dipping sauce ingredients until the sugar has dissolved.
  6. When the rolls are golden and crisp, you can take them out of the oven. Enjoy!
