Beef in Black Bean Sauce is a Chinese takeaway favourite. It’s also incredibly easy to make! Enjoy succulent strips of marinated beef, tasty black beans and a delicious sauce. After you have marinated the beef for 2 hours (or overnight), it only takes 35 minutes to make. Yum!

  • 1 rump steak
  • 1 tablespoon fermented black beans
  • groundnut oil for stir frying
  • 1 small carrot, julienned
  • 1 green pepper, cut into chunks
  • 1 large onion, cut into eighths
  • 1 clove garlic, finely chopped
  • ½ teaspoon sesame oil

  • For the marinade:
  • 1 tablespoon soy sauce
  • 1 tablespoon Shaoxing wine or dry sherry
  • Pepper to taste
  • 1 teaspoon cornflour, mixed with a little water

  • For the sauce:
  • 1 tablespoon soy sauce
  • 1 tablespoon granulated sugar
  • 4 tablespoons chicken stock
  • hot chilli sauce to taste
  • 1 teaspoon cornflour, mixed with a little water
  1. Put the beef in the freezer for 30 minutes to firm up the beef, so it’s easier to slice thinly.
  2. Put all of the marinade ingredients in a bowl. Mix together and set aside.
  3. Slice the beef into thin slices. Put the beef in with the marinade and coat well. Cover the bowl and put it in the fridge for about 2 hours (the longer the better).
  4. Rinse the fermented black beans and put them in a cup. Cover with water and soak for 15 to 20 minutes. Drain and rinse again. Chop them up finely. Set aside.
  5. Mix together all the ingredients for the sauce. Set aside.
  6. When you are ready to cook, heat a wok (or large frying pan if you don’t have a wok) with oil. Drain the meat from excess marinade. The remaining marinade can be added to the sauce.
  7. Add the meat. Fry the meat until cooked. Remove with a slotted spoon. Set aside.
  8. Add the onion, pepper and carrot. Stir-fry over high to medium heat for 7 to 8 minutes.
  9. Add the black beans and cook for about 2 to 3 minutes.
  10. Add the garlic and cook for 1 to 2 minutes.
  11. Add the beef and the sauce. Stir well, until the sauce begins to thicken (2-3 minutes). Mix in the sesame oil.
  12. Enjoy!
