A Chinese classic and one of my personal favourites: Crispy Aromatic Duck. With this easy-to-make recipe you can enjoy crispy duck with soft pancakes, and fresh cucumber and spring onions. Yum!

Serves: 6
  • 4 duck legs (or 6 duck breasts)
  • 2 handfuls of salt
  • 3 tablespoons of Chinese five spice
  • 1 knob of root ginger
  • 1 orange, zested
  • 2 sticks of cinnamon
  • 1 star anise
  • 2 red chillies
  • 600g duck fat
  • 1 cucumber
  • 1 bunch of spring onions
  • ½ jar hoisin sauce
  • 16 soft pancakes
  1. To get extra crispy duck, sprinkle the duck with salt and leave for 15 to 30 minutes.
  2. Preheat your oven to 150C (Gas 2).
  3. Pat the moisture off the duck with a paper towel.
  4. Get a large ovenproof casserole dish, and put the duck in the dish. Add duck fat, chillies, star anise, cinnamon, orange, ginger, and five spice.
  5. Cover the dish and cook for 2 ½ hours in the oven.
  6. Cut the spring onions and cucumber into strips.
  7. Take the casserole dish out of the oven, and take the duck out of the fat. Place it on a baking tray (skin side down), and turn your oven up (as high as possible). Cook (or ‘fry) the duck for about 5 minutes in the oven.
  8. Take a fork and shred the duck with it. Serve the delicious and crispy aromatic duck with pancakes, cucumber, spring onions and hoisin sauce.
